Champagne and Coffee Stains - Meal Planning Made Easy

Are you a snow person?

I am defintiely not. I love the sun - or really any weather that I can get outside and run comfortably without having to wear a ton or layers!

Today we're waking up in Minnesota to a ton of snow. Not only that, but this is just storm 1 of 3 that's about to hit us this weekend. So it's looking like my 14 mile long run on Sunday is going to be a treadmill run.

Before we got all this snow I looked ahead for the forecast and knew I'd be craving ALL the comfort foods so stocked up yesterday.

One recipe we've really been loving lately are these pizza roll ups. I haven't had a chance to write this one up on the blog, but I figured I'd share it with you here becasue we're going on 7 weeks of making this every Friday.

Pizza Roll Ups

Ingredients:

  • 2 cups all purpose flour
  • 2 cups 0% greek yogurt (I use fage)
  • 2 tsp baking powder
  • 2 tsp salt
  • 1/2 cup marinara sauce (I like Rao's)
  • 1/2 cup mozzarella cheese
  • 5 oz turkey pepperoni
  • Garlic Salt
  • 1/4 cup Parmesan cheese

How to Make:

Preheat oven to 400 degrees and spray a muffin tin with non stick spray. Sprinkle a little garlic salt into each cup.

In a bowl, combine the flour, greek yogurt, baking powder and salt. Form into a ball (if it's too sticky, add in 1-2 tbsp water).

Roll out the ball into a large square and spread the marinara sauce on top evenly. Then add in the mozzarella and turkey pepperoni.

Roll up the dough with the toppings like you would for a big cinnamon roll.

Cut the dough into 12 slices and put each one into each cupcake container.

Sprinkle the top of each cup with garlic salt and the parmesan cheese

Bake for 15-18 minutes or until golden.

Enjoy!

Nutrition will vary for this depending on the ingredients you use, but generally, each one is 140 calories - 14g carbs/ 11 g protein / 5g fat. Pair with a salad and you've got a complete dinner!

Hey Reader I've really been getting into podcasts lately. Hey Reader Can you believe February is already almost over? This month really flew by for us - between the super nice weather and lots of days off school (I had no idea kids had so many days off in Kindergarten!), I feel like I blinked and the month is pretty much over. I'm all for it though because I'm so ready to switch seasons and get into spring. Time to break out the short sleeve shirts and put away winter jackets. Woohoo!
